Grade A is the binchotan that serious grill kitchens ask for. Each piece is sorted by hand for length, straightness and density, so a carton looks and burns the same from the first layer to the last.
White charcoal is refined at the end of the kiln cycle, then smothered in a mix of ash and earth. That final step burns off what is left of the volatile matter and leaves a hard, pale surface. Struck together, two good pieces ring like metal.
On the grill it takes longer to light than lump charcoal. Once it is going it holds an even heat, gives off very little smoke or smell, and can be put out and relit for a second service.
