Grades are a sorting decision, not a different product. All three come from the same kilns.
Grade A
Long, straight, dense pieces with few cracks. Best for show grills and premium menus.
Grade B
Shorter pieces with more variation in shape. Similar burn, better price. Common as everyday fuel.
Cut sticks
Pieces split and cut to an even length so they lay flat in a narrow grill. Less prep in the kitchen.
What to check on a sample
- Weight in the hand: good binchotan feels heavy for its size.
- Sound: a clear ring, not a dull thud.
- Breakage in the carton: some fines are normal, a layer of dust is not.
