How to light binchotan the right way

Binchotan is slow to start. Planning for that is most of the job.

Lighting

  1. Place pieces in a chimney starter or over a gas burner.
  2. Give it 15–20 minutes until the edges glow.
  3. Move the lit pieces to the grill and add new pieces next to them.

During service

Control heat by moving pieces closer together or further apart, and by opening or closing the grill vents. Avoid sudden water or cold air, which can make pieces crack.

Putting it out

Place the pieces in a metal pot with a tight lid. Without air they go out, and can be relit the next day.

Safety

Use charcoal only where there is ventilation. Store unlit charcoal dry.
