Both are made from hardwood. The difference is in the last hours of the kiln.
Lighting
Lump charcoal lights in minutes. Binchotan needs a strong flame and more time, so kitchens light it before service.
Heat and duration
Lump reaches high heat quickly and burns down faster. Binchotan gives a lower, steadier heat that lasts much longer.
Smoke and smell
Binchotan has very little volatile matter left, so it produces almost no smoke. This matters indoors and at open counters.
Cost
Binchotan costs more per kilo. Because it lasts longer and can be relit, the cost per service is closer than the price per carton suggests.
Which to choose
Many restaurants use both: lump for high-heat searing and volume, binchotan for the grill guests see.
